Fats In General

The main components of all fats are fatty acids, which consist of either saturated, monounsaturated or polyunsaturated. Fats that contain a high proportion of saturated fatty acids are generally solid at room temperature and are commonly known as saturated fats. They are usually derived from animal sources and we know them as butter, suet and lard, etc. We also have hydrogenated fats (artificial and bad). Partially hydrogenated fats are called trans fats (artificial and bad). We do require a small amount of saturated fat in our diet; the problem is that on a standard western-type diet too much hydrogenated and saturated fat is consumed.  Butter is far better than the artificial margarines; it contains butyric acid which is used, for example, by the fast turnover colorectal cells.

These are liquid at room temperature. Essential fatty acids help to keep the arteries soft and pliable, this in turn, allows the blood to flow more freely, therefore helping to lower blood pressure.  The positive knock-on effects are inestimable.

Essential fatty acids are hormone precursors, these help to run and regulate bodily processes.  For example, lack of certain hormones is a cause of PMT.
